Fusing rich culture and food is what Madrid Fusión Manila 2015 was all about. Local patrons and foodies made sure not to miss out on the prestigious event last April 24 to 26, 2015 at the SMX Convention Center. After all, this is Madrid Fusion’s first venture into Asia. The affair brought Spain’s world renowned Michelin-starred chefs to Manila including Andoni Luis Aduriz (Mugaritz, 2 Michelin Stars; 3 Repsol Suns), Elena Arzak (Arzak, 3 Michelin stars; 3 Repsol suns), Quique Dacosta (Quique Dacosta Restaurante, 3 Michelin stars; 3 Repsol suns), Ramón Freixa (Ramón Freixa Madrid, 2 Michelin stars; 3 Repsol suns), Francis Paniego (Echaurren, 2 Michelin stars; 3 Repsol suns), Paco Roncero (La Terraza del Casino, 2 Michelin stars; 3 Repsol suns), Mario Sandoval (Coque, 1 Michelin star; 3 Repsol suns), and Paco Torreblanca (Torreblanca Bombonerias y Pastelerias, Best Pastry Chef in Spain & Europe).
Asian chefs André Chiang (Restaurant André, World's Best 50 Restaurants) and Alvin Leung (Bo Innovation, 3 Michelin Stars) also demonstrated their gastronomical craft alongside our own celebrated restaurateurs and chefs Fernando Aracama (Aracama), Margarita Forés (Grace Park), J. Gamboa (Cirkulo), Chele Gonzalez (Gallery Vask), Pepe Lopez (Rambla), Rob Pengson (The Goose Station), Bruce Ricketts (Mecha Uma), Myrna Dizon Segismundo (New Manila), Claude Tayag (Bale Dutung), and Juan Carlos de Terry (Terry’s).
Aside from the individual presentations, trade shows were also a vital part of the event where Spanish and Filipino products (I.e. Spanish wines, cheeses, coconut, and artisanal salts) were showcased to the delights of many. San Miguel Pure Foods, through its foodservice arm, Great Food Solutions (GFS) is among the honored exhibitors. GFS came in as a major event partner and showcased their wide product offerings like dairy, value added meats, canned meats & vegetables, oil, baking ingredients, and spreads. GFS certainly was not only given an opportunity to establish itself as a pillar of the Philippines food industry but also showed that they are truly committed in being a one-stop source for foodservice needs.
Madrid Fusion Manila did well on the objective of promoting the Philippines as the center of culinary excellence in Asia all thanks to the participants and organizers of the event.
